Preparation
- Chops: Marinate the chops in 4 cups of the apple cider for at least 4 hours before service.
- Per order; remove chop from marinate, dab dry, season with Mrs. Dash Table Blend Seasoning, in a hot saute pan sear the chop on both sides until lightly browned, place chop pan and all into a preheated 500ยบ oven to ordered temperature.
- Remove from oven and place onto a dinner plate, ladle 3 ounces of carmalized onion and apple glaze atop chop, make sure you get plenty of garnish onto the chop.
- Sauce: Bring a wide based sauce pan very hot, add 2 ounces oil, add the onion rings and allow to carmalize, stirring frequently, add the brown sugar and allow it to dissolve without burning.
- Deglaze the pan with the apple cider and allow to reduce by a third.
- Tighten the sauce slightly with the corn starch slurry, (do not add to much)
- Add the sliced apples and the butter to finish the sauce.
- Pour the sauce into a six size pan and take to the line for service.
