Chicken Salsa Salad
 
Refreshing chicken salad full of salsa, corn and green peppers over crisp mixed greens
Yield: 11 oz
Portions: 24
Ingredients Measure
Boneless, Skinless Chicken Breast Halves 6  lb
Mrs. Dash Chicken Grilling Blend 1/2  c
Chunky Salsa 1 1/2  c
Light Mayonnaise 1 1/2  c
Frozen Whole Kernel Corn, Thawed, Drained 6  c
Green Bell Pepper, Chopped 6  c
Mixed Salad Greens 4  lb

Preparation
  1. Sprinkle chicken with half of Mrs. Dash Chicken Grilling Blend.
  2. Cook on grill for 6 minutes, turn and cook until chicken juices run clear; cool and cut into bite-sized pieces.
  3. Blend together salsa, mayonnaise, and remaining Mrs. Dash Chicken Grilling Blend.
  4. Combine chicken pieces, corn, and bell pepper.
  5. To serve, place salad greens on a plate; top with chicken mixture, then with salsa mixture.
