Caribbean Pork Kabobs
 
Marinaded pork tenderloin, fresh pineapple and seasonal vegetable kabobs topically seasoned served over rice

Ingredients Measure
Pineapple Juice 2  c
Mrs. Dash® Caribbean Citrus Seasoning Blend, divided 3/4  c
Pork Tenderloin, 2” cubes 4  lb
Sweet Onion, 2” cubes 4  large
Red Bell Pepper, 2” cubes 4  large
Pineapple, fresh peeled, 2” cubes 2  

Preparation
  1. In a mixing bowl, combine pineapple juice and ½ cup of Mrs. Dash® Caribbean Citrus Seasoning Blend.
  2. In a separate bowl, marinade pork with 1 ¾ cups of the pineapple juice mixture. In another bowl, combine vegetables and marinate with remaining pineapple juice mixture. Stir to coat evenly. Cover and refrigerate for 1 hour.
  3. Thread pork pieces onto 24 skewers, alternating with onion, pepper and pineapple cubes. Sprinkle atop the kabobs remaining amount of Mrs. Dash® Caribbean Citrus Seasoning Blend for additional seasoning.
  4. To order: grill one to two kabobs for 10-15 minutes, or until pork reaches internal temperature of 165°F.
